Best way to record digital piano?

🔌Digital Piano Question

I’m recording line out stereo and wondering the best route to take, should I record both hands on L and R outputs at once? (2 panned tracks) or would I get a better cleaner mix if I record L and R for each hand separately? (4 panned tracks) or is there an even better option? Should I just save myself the trouble and record MIDI instead?

I’m very new to sound recording so i’m trying to save myself as much mixing as possible, any tips on mixing for a solo piano piece would also be greatly appreciated.
