I baked an apple tarte yesterday, using pate sucree, filling was creme fraiche with egg yolk.Crust was awesome.

It's intended for today and was covered airtight, completely cooled but when I uncovered it today, the crust seemed somewhat soft.

It's not bad but what I love about a good tarte is that nice snappy bite. Can I just throw it in the oven again for a few minutes? If not, oh well

Eta: solved!

Hello,

If I remember correctly it was s time-travel fic where Harry (with a different first name, maybe the popular Hadrian; and coming from a distinguished background) was in Tom's year at Hogwarts. He was in Slytherin but stayed outside the dorm often? And had beef with Walburga Black?

I think it was mostly in Tom's POV and there is s specific scene where Harry is late to Slughorn's potion class and offers him an apple.

Thank you!

Bonjour, hello.

I'm soon going to visit your city and will fly back to Germany on Saturday (so far it has not been cancelled). I think nearly every European airport seems to be kinda chaotic and general advice is to arrive earlier than usual.

The airport seems to be tiny, is it still advisable to arrive like 3 hours before? Doesn't seem much to do there.

Thank you, merci, trugarez

I have been baking tartes lately and use a De Buyer carbon steel tarte pan. The sides get deliciously crunchy (how to describe? A nice snap?) but often the bottom is just eh. Not soggy but also not crispy.

I always blind bake (once weighted down, then without) and either use a custard like filling (like creme fraiche + eggs) or simply apple sauce for tarte aux pommes.

Does is matter if the tarte is placed on a rack or a sheet? Does a sheet insulate too much?

Or should I blind bake a bit more? I checked the oven temperature, it's accurate... I also did an eggwash but I don't think it helped.
