What is Infect?

"Infect" is a keyword ability with the reminder text of, "This deals damage to creatures in the form of -1/-1 counters and players in the form of poison counters."

What are some popular builds?

The most popular Infect decks are:

The Simic (blUe and Green) build is far and away the most common. It seeks to play an evasive threat and pump/protect it to win the game with 10 Infect.
On occasion, the Sultai (Black, blUe, and Green) build splashes black to provide additional evasive threats, strip key cards, and answer problem cards.
In Pauper, Infect takes on a mono-green approach eschewing blue in favor of more pump and protection.

Check MTG Goldfish for current lists.
