What is Pisco? Pisco is a grape-based brandy from Peru. Unlike other brandies, it is only distilled once, with no added water to balance the alcohol level. Also, unlike other brandies, it isn't aged in barrels.

We are interested in quality articles on how pisco is created, how it compares to other brandies, what gastronomical pairings work well, what techniques can be used to improve it, some historical findings, etc.
