Deep Dive: The Chemistry of Chocolate and Baking

I recently got really into understanding the chemistry behind baking, especially when it comes to chocolate. it's amazing how much of a difference things like the type of cocoa powder (Dutch-processed vs. natural) and the amount of fat in your chocolate can impact the final texture and flavor of a cake or brownie.

For instance, I learned that using Dutch-processed cocoa powder in a recipe without any acidic components can result in a flatter cake because it doesn't react with baking soda in the same way natural cocoa powder does. Little nuances like that can completely change the outcome!

Has anyone else delved into the chemistry of chocolate and baking? What are some of your favorite tips or things you've learned that have improved your baking? I’m particularly interested in hearing about how temperature affects chocolate tempering.
