Very pretty, kind of reminds me of ikebana! Sounds incredibly delicious too.

I'd be a bit worried consuming that much borage flowers though that might just be me. Last time we served a salad with those some guests had a stomach ache

If the dish caused a stomach ache it was very likely another ingredient. Borage is as edible as any plant out there.

Unless, of course, the guest is pregnant, at which point you want to limit ingestion of borage flowers for… other reasons

Yeah but a pregnant woman shouldn’t eat ceviche.

Could you explain? I'm pretty well-versed in these things but I have never heard about borage (flowers) being considered dangerous for pregnant women. Maybe I'm missing something?

The somewhat excessive German risk assessment that all the "borage is dangerous" talk is based on deals with supplements and people making borage smoothies, and it explicitly mentions that seeds and flowers aren't an issue.

I plant borage in my garden for the bees, and I’ve seen gardening books warn those who are pregnant or nursing that they should not consume more than 10 flowers a day, lest it cause discomfort from boosted supply.

I don’t think that should be a problem in the early trimesters, however, American medical advice tends to err on the side of a complete ban on foods and beverages if they present a remote possibility of a problem to the baby or the mother, and from there it becomes a game of telephone once it reaches the gardening community.

Awesome but less flowers! Other than that 👊

Agreed, maybe 5 or even just 3. Love the color pop.

So gorgeous! Love the colors. Though the drops could be evenly spaced and maybe fewer flowers.

I love the flowers. I think this plating is beautiful and colorful. There is something new to look at each glance

What then flowers taste like? Do they have an actual flavor or are they purely aesthetic?

Borage flowers have a very mild cucumber flavor.

Was the flavor of the otoro able to stand up to the strong aromatics in the dish?

Honestly if I were to do this dish over, I’d opt for a cheaper cut like tuna loin, salmon, or hamachi. You can still taste the otoro, but the star of the dish is the leche de tigre.

This looks like a plate of springtime. So pretty. From the US, don’t know what a lot of this is but it looks so good, I’d eat it!

This is beautiful!

Looks fucking incredible but I doubt most cooks could put this out quickly and have it look like that

Funny how some people say to avoid blue on plating, but I think the flowers give a nice contrast
