Need help finding a Spinach triangle bread recipe.

So, when I was a kid my mom used to get these triangle stuffed breads from the local farmers market. They were packed full of spinach, and I think maybe a little bit of onion and feta or lemon, as I remember them having a slight tang, but with a dominant spinach flavor, not overshadowed by onion. Perhaps a bit of seasonings beyond some salt, but I really remember a clean spinach forward taste. The bread sort of had the consistency of a tighter pizza dough, not full on big bubbles or anything. They were golden brown on the outside and roughly the size of an adult hand spread out. The tops were dusted with sesame seeds.

I can’t find them anywhere, and the guy who makes them has stopped showing up at the farmers market near my folk’s place in Northern California years ago. Searching online seems to bring up either puff pastry or spanikopita recipes, which I love, but aren’t the same. I’m trying to eat a bit healthier, and I figured I could bake up a bunch of these with half whole wheat flour and half high protein bread flour and freeze them for a quick breakfast or lunch that doesn’t leave me or my wallet feeling guilty.

They always gave me a Mediterranean vibe, but that barely narrows it down. Does this description ring a bell for anyone?

EDIT: thank you all for the help! From what I’ve seen so far I think they were Lebanese Fatayer. Definitely not Spanikopita or Afghan Bolani, because they don’t have the soft bready dough I remember. Though I had never heard of the Bolani before, so I’ll definitely try those out! Thank you u/spade_andarcher and u/AshDenver for catching on to the specifics that got us in the right track!

Oh yeah, I get these all the time! I usually just see them called “spinach pies” but I believe they’re Lebanese and called fatayer - though that’s a pretty broad term that includes a bunch of different meat and cheese pies in different shapes too. If you Google “spinach fatayer” or “Lebanese spinach pie” you’ll find a bunch of recipes specifically for those triangular ones though.

And yeah, they’re excellent for a light meal. Whenever I get Lebanese takeout I always order a couple extra to eat as breakfast or lunch over the next couple days.

Omg this looks the closest of anything I’ve seen so far. Maybe our local guy just had a different prep, because they were smooth and glossy on top instead of the “fins” sticking up, but the cross section on these looks exactly like what I remember. Thank you, this may just be what I’m after!

So after some searching I found this video, which is the closest to what I remember visually! Thank you for helping me solve this mystery!

I think you’re right. My husband is from the Middle East and his sister has made these with various fillings. The tang is from sumac.

That’s gotta be it, I remember that tang vividly.

I do love spanikopita! But I did also specifically say that that’s not what I’m looking for XD

Maybe a spinach calzone recipe would get you close, and you could alter the cheeses? There might be a little nutmeg in there too; that often is paired with spinach in Mediterranean dishes, but just a hint.

Spanikopita?

I think it's Afghan Bolani. The green sauce was a cilantro/parsley blend. I don't have time to do a deep dive, but google that to see if that's the thing you remember. Yummmmmm!

Holy shit I just googled these and they look amazing XD I’m just a sucker for spinach and carbs. These aren’t what I’m looking for, because they were thick and baked, not pan fried, but I’m definitely going to try them anyway! Thank you.

Hey northern cali girl myself pretty sure it’s bolani at least that’s what our local farmers market had.

Thank you! I’m definitely going to try them, because they look great, but they are for sure not what I remember. The ones I grew up with were not crackly and fried on the outside, but soft and pillowy. Some other folks here have recommended Lebanese Fatayer and I think that’s the closest I’ve seen to what I remember so far.

Maybe sigara boregi? Turkish spinach and cheese mixture in phyllo dough

2
PerthoOP•

Not phyllo, or puff pastry, they were definitely more of a bread texture, but the finished product would only be about 1cm at the thickest from the outside to the spinach filling, whole thing was an inch or two tall.

Love a good fatayer. I prefer that tartness against the pastry to spinach + feta. I had a layover in Doha and ordered some plus fattoush to nosh on. Heaven.

There's an Ethiopian place we go to some times and they have an appetizer like that. I absolutely cannot remember the name of the dish though.

Did they come with three different toppings of garlic/yogurt spread, red pepper spread and something green, like a pesto? The flatbreads were spinach stuffed or whole wheat plain or ?onion? 3 for $10. Definitely Mediterranean vibe, but can't remember their name. I used to buy these at my NorCal farmers market and they were so delicious. Last I saw you could buy them at Costco or local grocery, but haven't seen them since moving away.

Omg, I love those! Not the thing I’m currently looking for, but I know exactly what you’re referring to because I bought them for a while when I couldn’t find these triangle breads.

Or burek.

I had Burek for the first time just last year and it’s so good, but doesn’t scratch the same itch as the thing in thinking of.

https://www.maureenabood.com/best-lebanese-fatayer-recipes/

Follow it precisely and they’re AMAZING! I made a slew for Pi Day one year at/for work and they were absolutely inhaled.

When I was a kid, my dad would bring home a sack of a dozen of the huge ones you described but I prefer the small (3-4 bite) cocktail size ones.

The lamb/pine nut version are equally delicious, FWIW.

Another commenter recommended these as well and I think this might be it! Especially since the spinach recipe in your link mentioned lemon in it, and I remember them have a zesty zing.

1
AshDenver•

Yes!! Pick up a few ounces of sumac before planning to make them. Prep everything except the lemon juice in the spinach. Scoop out about a tablespoon of non-lemon spinach, then add lemon to the rest. Put the tiniest pinch of sumac with the reserved spinach and make one fatayer specially shaped with that. And taste test after baking. I still do a bit of lemon juice but it’s really the sumac that does it for me, the citrus zing without adding all the moisture.

Her dough is freakishly amazing. I’m not sure how using different flours would respond or impact things but as-written, fricking fantastic — after growing up on them, I am confident that her recipe is The Real Deal.

2
PerthoOP•

I have sumac already! I feel like this was meant to be XD thank you very much. Some googling lead me to this as well, which is visually identical to what I remember, but I think I’ll follow the recipe you gave and just try this fold as well as the one with the fins. I’ll start without swapping out flours and then experiment after.

1
AshDenver•

Oooooh, I can’t wait for the report back on how it went! As well as the experiment with the other flours.

Oh, I don’t have a NYT subscription:(

They’re called jingalov hats, if you Google there’s lots of recipes out there. I just use whatever greens I have on hand.

2
PerthoOP•

Oooo, these do sound good! I’ll have to try them. They’re not what I had before, but I’m loving the opportunity to try new things!

Oh yeah - I was figuring use that filling with a pie dough crust.

Spanokopita? Yummm

Love it! But not what I’m looking for I’m afraid.

spankenstein•

Try looking into Greek village pie. It sounds like what you might be looking for.

1
PerthoOP•

Ooo, that does sound good, but what I remember didn’t use phyllo.
