Input feels really binary

I'm more used to realistic racing games, where even with a controller there's a range of steering I can do. One technique is to hold the left stick forwards and then gently nudge it to the sides. This does not seem to work with this game since it will pick up very minor innacuracies and the car will wobble. I've turned off all the assists, set counter steering to 100%. Keep seeing mention of "advanced controller settings" but cannot find these settings at all. I only have the three basic settings.
