Winging it in late September

First time to the Amalfi area and not sure how many days we'd like to stay (2 adults). Hoping to book last minute hotel deals online for maximum flexibility when we arrive. Ravello is a must see for us. Is this even possible or am I dreaming? Thanks for any advice.
