What would you do here for this void in the kitchen?

We have this weird ~7ft gap in our kitchen that I assume used to be a breakfast nook.

I commissioned these professional renderings of what we might want to build. We're considering just extending the cabinets/countertops from the main counter to the little half wall on the right. And maybe adding a half-depth above counter cabinet to hide the electrical and coax outlets.

We'll obviously extend the vent to come out at the cabinet front, but the other weird thing here is that to maintain counter height, we'd need to cut off the window sill. Right now we're thinking we don't care about that, but maybe there's a reason why this is really stupid?

If this was your kitchen, what would you do?
