Best noodles?

I have a craving for some braised beef noodles after watching too many food videos on YouTube, what places would you recommend for noodles and what do you order? We have quite a few options in Leicester but for some reason I feel nervous going to new places on my own and all the options are a bit overwhelming lol.

Already love Pho Le. Wasn’t a fan of Sakura but I went back when it first opened so maybe it’s better now. Yaki Machi were ok.

I want to try some “dry”? noodles mainly but down for some good ramen too. Thank you!
