Am I going to be disappointed with a Miyabi Shiro?

Miyabi Shiro

I’ve been doing a lot of research and browsing for the last couple weeks and I really like the look of the Miyabi Shiro 8” chefs knife. There aren’t any reviews for that specific model, it’s a Williams Sonoma exclusive.

Currently im using a Shun 6” chefs knife. I’ve loved it, (chips and all), but I’ve been cooking more, and I don’t like not having knuckle clearance, and it’s a little short for some tasks.

I’m not starting a collection. I won’t be doing side by side comparisons. I’m not worried if it’s “overpriced” by $25. I know how to sharpen. I just want a nice knife that is a joy to use.

I like the hammered finish, the octagonal handle seems like it would feel nice, I am going to try it before I buy. I love the lighter colored handle. Stainless steel is probably a better option for me than high carbon.

Is there any real reason not to buy this knife?
