I played at the start to level 30 before stopping. I want to start playing again with a friend. Both of us pretty much noobs.
Which server on EU would be good for PVE and some PvP?
Is there a proper trade system now? I remember only being able to mail stuff previously hoping the other guy would mail you what you want.
Also, are there any collectable pets? My friend loves collecting pets in WoW.

PvE and PvP is not on what's called megaservers. Meaning that the only "indentity" left of a server is WvW.
No proper trading system yet. "Nothings off the table".
There are minipets which can run after you. And there's ranger pets. Ranger pets are found by exploring the world. Minipets are mostly just bought off the trading post.
Shame about the trading. How do people currently sell stuff to one another?
So mini pets I'm guessing are purely cosmetic.
I remember there being done sort of real money shop with gems. I'm guessing that's the trading post? Or is trading post the answer to my trading question?

I guess you quit in the very early days when the Trading Post was bugged, that's where people trade stuff, you don't have to worry about mailing.
Yeh was pretty early. I should always intended to keep playing just never happened.
There is still the Auction House [Black Lion Trading Company] to trade - not the same i know but you can NOT be scammed using it at all.
On Minipets, they are mainly cosmetic but are buged in a way the pull aggro and trigger traps so in many instances you do not want to display them [mainly Fractals & some specific Dungeons]
The so called "Real Money Shop" is a Part of the BLTC and everything up for sale there can be bought with Gold the only exception to my knowledge being the Expansion.

I'd restart - they cut the XP required to reach 30, and every level you get bonus stuff. Help you ease back in. Make sure you do every event you see, and only do hearts if you can't find anything else to do.
Your world selection only matters for WvW. If you're friends with someone, or in their party, you'll play together.
Still no trade system, never gonna happen. You want to sell your stuff put it up on the trading post. It's more robust than WoW's.
Collecting applies to pets (we call 'em miniatures), armor and weapon skins now.
