Curing salt in Europe

Hey all,

I haven't yet found a good source for curing salt here in the Netherlands. According to Chefsteps, it's a combination of sodium nitrite and sodium chloride (normal salt). (https://www.chefsteps.com/ingredients/prague-powder-no-1)

Does that mean i can just buy food grade sodium nitrite and combine? It also seems way cheaper, e.g. a 1kg is 8 euro over here: https://www.deoplosmiddelspecialist.nl/kopen/natriumnitriet

What are your thoughts?

I make my own. 6.5% sodium nitrite by weight and the rest kosher salt. Then I whizz it up in the blender to mix it and get a consistent grain. For dry curing you'd need sodium nitrATE as well.

You could also try a good butcher. Ie. One that still produces his own products instead of buying everything ready made from supplier.

A pharmacy should be able to buy sodium nitrite in bulk.

If you live close to Belgium you could try ISPC. It's a lot like Hanos and Sligro, but superior in quality and from experience they offer a wider range of... Everything

In the US, you can often get curing salts from the butcher much cheaper that you can find elsewhere, but you have to ask.

If you want to send me some Dutch snacks to the US in exchange, I'll send you as much as want.

Huh. I wonder if there is a subreddit for this, informal trading of candy and crap

Have you tried Sligro or Hanos? Where do you live?

You can make your own, just make sure that it is labeled and kept separate from your other salt. I use straight potassium nitrate for curing all the time. r/charcuterie also has some discussions about the differences.

Edit: mixed up my ate and ite

Dunno how much you need, but Amazon has it at least in Spain.

It's called 'inmaakzout' in Dutch and you can buy it at a reformshop or nature store (natuurwinkel). But I don't see any objections in making your own ;)

Wow thanks for all the replies. Actually we have a Sligro and a good butcher so I'll go there tomorrow. Sometimes have to remember not everything is easier online..

Indoor ribs here I come!

@thewombbroom : We can still exchange snacks for salt, just because it's a cool idea :)
