How to create a website to journal my learning progress? Do Udemy etc. offer APIs that communicate the progress?
No idea where to start, to be honest...

Basically, you want a blog.
Check out http://wordpress.com (hosted version), or http://wordpress.org (self hosted), also Blogspot (can't link because it's a blocked domain) is good to use and easy.
Which one would you recommend? Wordpress looks really professional, but I really want the site to be ad free. Ad free for viewers, that is.
Use your learning progress to build a site from scratch. Start with a basic site, as your learning progresses make the site more interactive, make the links to the different aspects of learning. Find a cheap host and registrar, just dont use go daddy....
I think I'd much prefer that. I could have a 'playground' for web apps I build. I'll check with my ISP what a site including URL would cost.
First, you should use a local only webserver, like XAMPP
Then, once you have acquired some decent skills, you can move to a free server, like bplaced or Square 7.
You won't need a paid domain for starters.
this is what I use http://www.totalchoicehosting.com/shared.html
Edit: Also I would recommend you learn to use git. whether its github or bitbucket or some other form of version control. This is where you can keep track of your progress separate from the actual site. Or you could have links to various stages of your site as it has progressed.
