Can't find a clear cut answer: Please help!

The second ferment causes carbonation which is why you have to burp the jar to prevent an explosion. Ok, what about after that when its "done" (whatever that means). Can I keep the lid on and drink later like a bottle soda? I don't understand. In other words can I make a bunch of these mason jars and keep them in my fridge for weeks at a time to drink later and not have to continually be burping them?
