They are down there so that I can protect them. Also it was a surprise to my realm buddies and I didn’t want their barking to give away the surprise. Also I’m running an illegal puppy mill.

I’d recommend joining a relatively small server. I’m part of a 60-is person one that is really fun. I prefer building/mining on my own, but it’s nice to have the option to work with others.

Yep. Smaller (say <100) servers are the best. I like servers that allow there to be ~15-25 people online at most times.

I'm part of a small realm with ~20 members active members, but we've been griefed like 7 different times and we've only been doing this for 3 weeks. I can never build anything nice looking because I'm always paranoid that I'll come on the next day and everything will be gone...

Realms?
I don't know what protections are available on realms, but in community-run servers grey-listing is a pretty common tool as well as having roll-back abilities.
If realms don't offer these features (which I would consider very basic), then I can't see a reason to pay for it.
The community run [Java] server I'm on has had very little issue with griefing. WE had a few that showed up thinking we were a different community, but that's been fixed [and was fixable].
