What to do with pistachio spread?

Hey guys,

I've come into a fairly large quantity of high-quality pistachio spread and I'm already pushing the best before on it.

It's absolutely delicious and I always put it on toast and crumpets, in ice cream, and I've done a pistachio and raspberry tart before, but I still have quite a few jars left and want to make something special with them before they turn/go rancid.

Any ideas?

Can you freeze them? I know Nutella is freezable.

Consider taking your favorite peanut butter cookie recipe and substituting the pistachio for the PB. Worth a shot, right?

Lots of Middle Eastern/North African treats use pistachio paste. You could make pistachio ma’amouls, baklava, etc.

That's a nice idea!

It's not quite paste though, it's more of a spread (like Nutella) so a bit runnier, sweeter and creamier.

I like pistachio ganache, brittle and whatnot

Freeze a gallon or pint sized brick of ice cream extra cold to where it's too hard to scoop. Slice into half inch thick slabs. Spread pistachio paste on one slab. Cover with another. Lay on rectangle of phyllo and top with another rectangle of phyllo. Serve immediately.

I've never heard of this as a thing but I love pistachios and would love to try this. I have googled and see a few options but can you recommend me the brand name of whatever you've got there?

I am definitely think a 1/2 tbsp in the water for rice, just before you cover and simmer it, would come out delicious. I use salt, butter and different ground nuts.

I'd freeze it but you could also make a layer cake or roulade and use it as the filling.

Pistachio cream sauce on a wide pasta like pappardelle with a little crispy bacon or speck is absolutely delicious
