Moving out, buying my first knife

I'm planning on moving soon from my parents and i've gotten 2 Global knives (bread & pairing) for free and i'm now in need for a proper all-around knife. I've only glanced at certain knifes brands and i've taken an interest in damascus steel because of the looks.

1. Style? Japanese

2. Steel? Stainless

3. Handle? Japanese

4. Grip? Pinch

5. Length? 18,20 & 21cm

6. Use cases? The uses outside of the bread and my pairing knife.

7. Care? Whetstone, i have yet to learn to use one but i'm willing to learn

8. Budget? 300€

Because you're in the EU I would suggest looking through cleancut https://www.cleancut.eu/butik/knifetype/gyuto

I would recommend spending something like 200e on a knife, or 250e, then getting the shapton pro 1000 from knivesandtools (or, if they still have the deal, you can get the 1000 and 5000 with a discount, that's a very good buy). I don't think it's wise to buy an expensive knife without having a way to sharpen it.

Can't go wrong with a Miyabi in my opinion. Some people think that they are a little overpriced but I love both of mine and am likely going to add another. They're well within your 300 euro price range.

If you want Damascus then go for the 5000FCD line i would say with the 21cm or 24cm Gyuto. I have the 24cm variant. If you look at my previous posts you should be able to find an image.

If you're in Europe then I've found this website to be great:

Do you think it's worth to shell out a little extra for the 5000MCD line? Those wood handles are mesmerizing.

5000MCD are amazing, but the handles are quite fragile and require some care. The blades are incredible and edge retention is hard to beat. I haven't sharpened mine yet... If you are a careful user, the extra is certainly worth it.

A sturdier alternative, in the same style, would be the Yaxell GOU line

I have some Rans (the petty and Nakiri) and a Super Gou. Can not recommend. You'll love them at the start only to realise your money could have gone into better stuff. All. Of mine bD quite uneven bevel grinds for example.

No experience with them personally, but I believe you get sg2 steel instead of vg10 in that series and the knives are even harder. I do agree the handles are beautiful too.

I don't think you can go wrong with either, just whether you want to spend the extra money.
