There are many guides online for this very thing.
If you really want to get into the nitty gritty of gearing I suggest looking at those BiS lists and deciding what items would be best for you. Most of the lists will list several options for each slot. Usually with threat generation in mind, or damage mitigation in mind.
I suggest reading the wiki posts on what +Defense Skill actually does for you, what +Hit actually does for you, and What Block/Dodge/Parry/Miss actually are and how they effect you.

Not trying to be rude at all, there's TONS of information out there about it, honestly easier for you to look at the resources than me try to tell you and probably miss some things.
