Finished the game almost 10 times, have every trophy in steam and only need one in ps4, but still, idk how that is made so..

OK - someone gave me the answer. Go to the "Write Message" area and then press Y or Triangle to "Change Note Format" and you can add gestures.

When you write a message, press a button (I think it's the same as the one you use to two-hand stuff and swap between interactions) to swap between message layouts. Should be a tiny note about it on the bottom of the message creation screen.
That lets you cycle through all the message variants which includes the ones with gestures.

It's F on keyboard for me, but I have custom key binds so I may have moved it
Ahh, I was referring to controllers. On Xbox it's Y and on Playstation it's Triangle. I've never even tried to play Souls with KB/Mouse. lol
