Issues balancing flavour in my Tiger Tail batch, any suggestions?
Hi all - I know this isn’t a common flavour to make so my recipes to reference are few.
The no-churn recipe I used called for 2tsp orange extract to 4tsp anise extract for the liquorice ribbon but it has come out SO bitter! Would you think it better to make an additional batch of just orange flavoured cream to dilute it, or add plain cream to dilute both flavours overall? I assume the anise is the problem but orange extract isn’t exactly sweet on its own..

That is a lot of flavouring; those are pretty powerful flavours. When it comes to dilution, typically you could just make more ice cream but in this case, with a ribbon, you'd have to be okay with making an orange and licorice flavoured single ice cream, which isn't quite tiger tail. Hard question. If it were me I'd be tempted to just toss it and start over - this is a learning lesson: those flavours were bitter before you made the ice cream (if anything they'd be more bitter because cold inhibits flavour release), so you should be tasting as you go along. As soon as you stir in your extracts, taste it and adjust from there.
If you're okay potentially wasting more ingredients, you could totally melt it down and add neutral base (i.e., your base with the proper ratio of milkfats and sugars, but no flavours/extracts), then rechurn.
Edit: I see you didn't churn. Eh, not a fan of no-churn recipes, but the advice remains the same with the exception of process.
Thanks for the advice. I happened to see the recipe and did it on a whim since it’s not summer if I don’t have a few scoops of this flavour lol
I didn’t really question the recipe. I didn’t realize how strong it would turn out. I’ll play with this batch a little more as a test and maybe try again in the future.
