12 Hours for a security update
I got the latest security update this morning (12.0.3.0(QCEUXM) and after 12 hours it's still not completed! The phone comes on but pretty much none of my apps will run and if I do try and run one it reboots the phone. Is this just a giant update or has something gone horribly, hideously wrong?

I think so, on mine it took maybe 1-2 hours. Since your phone is "usable" I would propose a full backup, and then a factory reset, that may fix it.

I did my back up - and now everything magically works! I think I must have got a dodgy phone (or am trying to do too much with it) it gets very glitchy around updates.
Happy to help! Update problems are not very rare, unfortunately, pretty much on any kind of device. If your phone crashes a lot regardless of updates, you should maybe contact the seller and see if a warranty exchange or inspection might be possible.
There is nothing wrong with "pushing" your phone, and while heavier apps might cause some bugs and glitches on slower phones, basic apps should not consistently crash, especially on a factory reset phone.
