Can anyone recommend and interesting domestic flight on an unusual aircraft?

Other

About 10 years ago, Kan Air used to fly a small Cessna C208 to places like Mae Hong Son, Pai and Phitsanulok. Those flights were an adventure in their own right, low altitude, on a tiny plane, with spectacular views. Nothing like the boring trips on an ATR-72/A320/B737.

Kan Air is long gone, but are any similar interesting flights still operating in Thailand?

The only I came across is C208 to a private hotel airstrip on Ko Mai Si (near Ko Chang), but that's only for guests of a hotel way outside my price range.

Still have CM - MHS flights on a propelled airplane, one per day either way

Do you know which company operates them?

I see Nok Air operates a Dash 8-400 from Bangkok, but that's just a run of the mill 70-seat turboprop.

The luxury resort Soneva Kiri on Koh Kood has its own airstrip and small plane to fly customers in.

Otherwise Nok Air runs some flights with a relatively small plane, for instance to Betong.

The only one that I know of is Sky Club Asia.

The website looks down.

You could try one of the GA flying clubs in Thiland? Not sure if a foreigner can do an "intro flight" in Thailand or not... but maybe they'd still take you up. Although it wouldn't take you anywhere but sightseeing probably :P

I took one of those Kan Air flights from CM to MHS—it was nothing short of spectacular!

Yes, it was so cool that after taking 1 flight on that C208 for transportation purposes, I took 5 other flights with them just for the fun of it.

On that aircraft, I loved being just 1m-2m from the pilot’s seat, watching the instrumentation, the pilot’s actions, and generally feeling part of the piloting experience as well the beauty below.

When I went skydiving (not Thailand but maybe relevant) we went up in a tiny plane, held together with duct tape, with the door open. An additional benefit, or drawback depending on your perspective, is you get to / have to jump out of it.
