Just when you think you've heard it all...

My boyfriend works in a small brewery in a smallish town. He works BOH, and I am a FOH lifer. We don't currently work together, but we share stories. He topped me today. They have a server there, at the brewery, that cannot carry a drink tray. Apparently this is such a problem, this server has found a disgusting solution to delivering drinks to large parties. So... He brought all the beers and waters out in a glass rack, the plastic kind that go through dish. He delivered the guests their beverages by setting a fucking glass rack down on the table behind them and pulling their beers out, one by one, I'm assuming by putting his fingers in them, all in the middle of a crowded little restaurant. I.Am.Appalled. This is the equivalent, in my mind, of delivering food to the guests at the table in a buss tub. Even if it's a clean buss tub, we all know what goes on in there. Am I being overly judgemental, or is this flat out gross?

Yes it's gross, also super fucking weird! Why is there not a manager, or even another employee, to stop them immediately before that rack goes out to the floor?! Sounds like training isn't going well on either side over there...

This is what I thought immediately. Someone needs to stop them!

But why isn't anyone? Sounds like the brewery doesn't really care about training, or how they are perceived by the public.

They need to take a tray home and walk around their home without eyes on them carrying the tray. It’s most likely nerves

Load a bunch of lemons or limes on a tray and have 'em walk around with those. My balance is SHIT, I dread carrying full trays around, but lemon practice helped me a ton.

I see so many staff that don’t know how to use a tray. Holding by the rim with the tray on the forearm, two handed, it’s not rocket science. You should be able to get through a crowd with a full tray carried at normal height or pivoting to overhead. Training sucks anymore. We were not allowed on the floor until we could use a tray properly.

two handed

Carrying the tray one-handed, with your wrist bent back is a HUGE ergonomic no-no; it's why so many "lifers" have carpal tunnel.

Fourty years in and no carpal tunnel. Learn proper technique.

Thanks Lifer, will do. Wish I talked to you earlier instead of all these stupid physical therapists (what do they know, amirite?)

Technique helps. But I truly believe it takes practice. I can carry a cocktail tray with 12-15 glasses no problem. But it took awhile to get there. Also balance helps. Don’t put a full glass of beer in the edge of the tray. The heaviest glass goes in the middle for stability.

I can relate to not wanting to use the trays and being afraid of dropping them...but this ain't the solution

I am beyond tickled by the idea of serving a table their food in a bus tub Lolol like I’ll just leave this here for when you’re done with those.

Just like me going in the back room of the store I worked at to find the foreign coworker washing the floor mop out in the dishwashing sink 🤮

My first real paying job was in the dishroom of a university commons. We had a dishpit for pots and pans. The p&p guy, we'll call him Ralph, caught someone doing just that in his dishpit. Ralph nearly ripped off this poor soul's head to shit down his throat. Our supervisor intervened, calmed Ralph down, and explained in detail why that is not done. Fifteen year old me was assigned to train this unlucky unit following that.

lmao i did that once to our manager who decided to take a day off on a busy Saturday to hang out with a large group of friends😂

If ya can't do the job, get a different one

Am I missing something about why this would be gross? You put beer in the glasses and drink out of them. They get cleaned by sitting in the racks and going through the dishwasher together. The glasses are in the dishrack before being put away/poured into. It's not gross to have the glasses in the racks, but it is gross to have the glasses in the racks at a table? What is gross about it?

Definitely unsightly, odd, and dumb. But not gross.

Maybe it's more the presentation, the idea that the guests see that as a dish rack, not a serving tray, and they automatically think of it being dirty? Also, it's damn near impossible to pull a pint of full beer out of there without touching the lip of the glass with your hand. So it's unsightly, yes. Good word choice.

If the tray is balanced and has some weight itself it shouldn’t be that difficult to carry

4
guy1138•

Balancing trays one handed is terrible for ergonomics and why so many "lifers" have severe carpal tunnel. Especially at a craft brewery where slinging pints for 99% of the day and there are kids running around; balancing a tray full of glassware is a disaster waiting to happen.

A craft brewery with servers should absolutely have "caddy style" carriers for table service.

A glass rack? I'm having trouble comprehending the story

This is like the same as a mechanic not being able to use a wrench. Person needs to be bounced.

nineball22•

That’s so far beyond lazy, it’s outright stupid. That guy shouldn’t be serving.

Um what? Lol 😂

Looks like someone needs to learn quick or find a new job.

If you say it’s clean, why is it disgusting?
