What is the best possible way to defend your cannons?
Heavy melee infantry in defend mode? Light ranged cavalry? Musketeers? If musketeers, do you leave them in volley mode or do you put them in melee or defend mode? Anything else maybe? A special formation?

There's no need to keep musketeers in melee mode. In volley mode they provide extra fire power. If enemy cavalry gets up close, you can switch the closest musketeers to melee mode, or just let them switch automatically
They tend to drift away when a battle ensues, leaving cannons exposed, unless they are in defend mode. But the problem with musketeers is they can't be put in melee and defend mode at the same time. They shoot in defend mode.
