What are the most interesting/innovative breweries from Denver to Boulder?

I've been to a few dozen breweries around Denver over the years, but that's just a small fraction of what the area has to offer and I'm curious what the most unique breweries are that I could visit on an upcoming trip. A few favorites have been River North, Bierstadt, Uhl's Cerebral, Black Project, TRVE and Woods Boss, and I've hit most of the other highly recced places like New Image, 4 Noses, Odd13, Cohesion, Burns Family and Fritz Family. I'm planning on visiting Jade Mountain Brewery & Teahouse. Are there others that I should try that are putting out unusual product?

Knotted Root in Nederland, CO. Delicious fruited sours. Nederland is about a half hour into the mountains so not too far out of the way!

Reverence is pretty new to the scene (just celebrated their first anniversary) but they make some good stuff. They also have their own N/A root beer on tap https://www.reverencebrewingcompany.com/on-tap

I second Reverence, only been in there a handful of times and they always impress. We really like their Root beer and the owners are super great people.

And let’s go Bucks! To you Mr/Ms Go_Blue 😜

Purpose in Ft. Collins is very unique. It's co-owner is the former head brewer at New Belgium and Rodenbach, Peter Bouckaert and his wife Frezi. They make some amazing and interesting beers and very much worth the trip up to Ft. Collins.

Other options I'd suggest include Primitive in Longmont, Raices, and Cohesion.

Dry docks south location is really close to Jade mountain and is worth a stop if you have not been before. Launch pad a little further north is worth a stop too, they have been putting out loads of unique stuff lately. They are also space themed.

The Emporium just west of downtown has been putting out some awesome unique stuff this summer too. And their regular beers are all great!

You already have a good list.

Cellar West does some great stuff. Dos Luces is unique in their offerings but not for everyone (personally, I love it). Rock Cut is in Estes but close enough. They put out some unique beers, in particular when they have Grzane Piwo when it gets cold

Dos Luces Brewery for pulque was certainly interesting, though not exactly beer.

Burns Family does some really good "beer nerd" beers.
