What are your favorite toppings for baked potatoes? I'm especially interested in protein options.

Pretty much anything you would put on a taco or in a burrito can go on a potato. Black beans, pinto beans, or lentils. Salsa, onions, jalapenos, fajita veggies, nooch, cilantro.
Yeah I've done refried beans and salsa
not the healthiest but the mckormicks salad toppings/bacon bits are actually vegan

#3: These Hawaiian sweet rolls from Aldi! I used to love sweet rolls before going vegan. Sad to just find out as I’m moving to a state with no Aldi in a week | 10 comments

Don't know about its protein content, but I'm really into lacto-fermenting, and fermented grated carrot goes really well with a baked potato IMHO.
Oooh I’m lactofermenting some garlic right now, bet that would be great!
Give it a go. It probably doesn't deserve to be called kimchi the way I make it, but it's yummy: see r/fermentation and r/kimchi
Chickpeas, kale, lemon juice, vegan feta as a treat if you can swing it. It’s still good without it tho! I also looove baked potatoes with broccoli and vegan cheddar but again vegan cheese is always just a treat.

Chili is always awesome. Throw a pile of vegan "Cheese" sauce on top and you now have a chili cheese baked potato. That's my usual go to, but anything saucy, and spicy.
MapoTofu is a Chinese dish that is so amazingly good and has lots of spicy sauce, I can dump that on a potato and be very happy.
