Thanks for your feedback! I like the use of the word hope in there, maybe I will come up with a line that uses it. Glad you enjoyed the rhyme scheme, I like to have some rhyming to give it a bit of structure but I struggle with writing things that are more rigid than that (still practicing that, but I think this is my favorite way to write).

Solid idea. A thank you note for someone who hasn't left yet where you want to say something much more. 

The rhyme scheme itself is quite enjoyable - I particularly like the repetition of 'ar' sounds forming the backbone of the scheme and then moving between 'oat' to 'et' then back to 'oat'. I gather there is no fixed metre, which I think is fine as the poem is an outpouring of feelings and emotion so doesn't need to be tied down beyond the rhyme scheme. 

Afloat as a word is a little old-fashioned in my opinion but I don't think it harms the poem really. I was thinking of maybe 'your dreams will give you hope' or something like that but that itself has draw-backs as being a half-rhyme and perhaps a bit too cheesy.

I dumped my heart into a thank you note  
But it was too long to fit in the card  
It had every word that was stuck in my throat  
With so much unsaid finding what to cut is hard  



Where would be the best place to start?  
The first day I saw you or the one we really met?  
I hold both of those days close to my heart  
I guess I’ll keep everything I’m scared you’ll forget  



I should keep it professional but I don’t want to regret  
Not telling you everything before you depart  
I have one more chance since you haven’t left yet  
I’d give anything to live this again from the start  



I’ll always hold you in the highest regard  
And I know your dreams will keep you afloat  
I hope this isn’t something you’ll just discard  
I dumped my heart into a thank you note
